Blueberry Cream Cheese Cookies with Lemon Glaze

Ingredients

Cookies

  • 2 ounces cream cheese room temperature
  • ¼ cup butter softened
  • ½ cup granulated sugar
  • ½ large egg
  • ½ teaspoon pure vanilla extract
  • cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • teaspoon salt
  • 1 cup fresh blueberries

Lemon Glaze

  • 3/4 cup confectioners sugar
  • 1 teaspoon lemon juice
  • ½ tablespoon milk
  • ½ teaspoon vanilla optional
  • 1 freshly grated lemon zest

Instructions

Cookies

  • Preheat oven to 350° Fahrenheit. Lightly spray a cookie sheet with cooking spray or line it with parchment paper.
  • Cream together the room temperature cream cheese, butter and sugar, until smooth. Add in the half an egg and vanilla and beat until incorporated. Set aside.
  • In another bowl, cream the sugar, flour, baking powder, baking soda, and salt.
  • With the beater on low, mix the dry ingredients with the wet ingredients until blended well.
  • Gently fold in blueberries with a rubber spatula being careful not to break them.
  • Drop dough by heaping tablespoons onto cookie sheet or use a cookie scoop.
  • Bake for 10-12 minutes. Let cool on wire rack. Drizzle with lemon glaze.

To Make the Lemon Glaze

  • Mix the powdered sugar, lemon juice, milk, and lemon zest together.
  • Drizzle lemon glaze over cooled cookies.
