Nutritious Avocado Toast with Pico de Gallo

Fast and easy and “oh so nutritious” Avocado Toast with Pico de Gallo and Everything but the Bagel seasoning.  Try this dish for breakfast and incorporate some heart-healthy avocados and lycopene-rich tomatoes. The best possible, healthy way to start your day!

Whether you use store bought or make your own, this is the perfect dish to wake up your taste buds in the morning and start the day right. It’s also a great light lunch or dinner dish.

I like to keep it real simple for breakfast and this recipe is just that. Sure, you could toast your bread in the toaster oven, but I like my french bread lightly buttered on both sides and browned in the skillet.

I used some french bread, but you could use a regular slice of your favorite bread as well and it would turn out just as delish!

What is Everything but the Bagel seasoning?

Everything but the Bagel seasoning is a must to try if you have not already, buy the large jar because you’ll definitely become addicted. This wonderful seasoning has a toasty, nutty flavor and adds a little bit of crunch to any dish.

The best news about this seasoning is that it has zero calories. Yes, you heard me right, zero!  This spice is perfect to use when you are on a Keto, Low Carb, Whole 30, Paleo, or Vegetarian or Vegan diet.

What makes up this wonderful seasoning? Everything but the Bagel contains a blend of toasted white and black sesame seeds, sea salt flakes, dried minced onion, dried minced garlic, and sometimes poppy seeds depending on the brand. Not only does it have a yummy flavorful and savory complex taste, but it is visually appealing as well.

What else can I use Everything Bagel seasoning on? The list is endless.

  • Sprinkle on any vegetables
  • Mix with cream cheese with jalapeno poppers
  • In soups and chilis
  • Over couscous, quinoa or rice
  • Add it to breads or grits or oatmeal
  • Pasta, ham, meat and sushi and other seafood dishes
  • Sprinkle on your roasted pumpkin or sunflower seeds

Avocado: Chose avocados that are slightly soft to the touch.
Pico de Gallo: Roma or Heirloom tomatoes and onion with a touch of lime juice. You can also buy store bought.
Salt and pepper: Helps to add to the flavors.
Everything but the Bagel seasoning: The perfect crunchy seasoning with great taste.

How to Make Avocado Toast with Pico de Gallo

  1. Cut up an avocado, sprinkle with lemon or lime juice.
  2. Dice your tomato and onion, use equal amounts. OR use store bought Pico de Gallo.
  3. Toast your bread in the skillet after lightly buttering each side.
  4. Stack with avocado, Pico de Gallo, salt and pepper.
  5. Sprinkle with everything but the bagel seasoning.

Variations for Avocado Toast with Tomatoes

Avocado: Spread a thin layer of hummus or a fruit spread on your toast prior to the avocado. Use any flavor cream cheese spread under your avocado, or leave out the avocado all together.
Tomato: Try tomatoes instead of pico de gallo, apples or cut up grapes instead.
Breads: Use your favorite bread or try sourdough, French, tortilla, or naan bread.
Seasoning: Taco seasoning.

Questions and Tips

What is the best way to get the seed out of the avocado? Take a sharp knife and firmly whack it onto the avocado seed. Once your knife is securely attached to the seed, turn the seed a quarter turn by holding the avocado tightly and just moving the knife. It should twist and come right out, still attached to your knife. You could also use a large spoon to scoop under it. I love using the gadget pictured above, it helps me get the seed out and slice it.

Can I top with sliced avocado or sliced tomato instead? You can slice your avocado and layer on top of your bread, overlapping slightly. If you do this I would recommend cutting up your tomato so it lays on top without falling off. You can also, mash your avocado then use the sliced tomato, overlapping.

Where do I find Everything but the Bagel Seasoning? Everything Bagel seasoning is found in most typical grocery stores in the spice aisle, at Walmart where they sell food.
